Roasted Pistachio Accord

Description

Instead of the sweet, dessert-like pistachio profile, this formula focuses on the smell of the roasted kernel itself. Pyrazines create the nutty foundation, while green aldehydes, fatty and creamy notes reproduce its fresh, slightly oily character. Thiazole, thiophene and other Maillard-type materials bring darker roasted nuances of toasted bread, popcorn, butter and subtle sulfurous warmth, with only a small amount of benzaldehyde supporting the natural almond-like facet.

This is a perfumistic interpretation, not a complete chemical reconstruction of roasted Pistacia vera. Real pistachio contains dozens of volatile compounds that vary with cultivar, processing and roasting conditions. The formula instead concentrates some of its most recognizable facets into a practical accord for use in perfumery.

The formula contains approximately 1.8% active aromatic materials, excluding solvents from the pre-dilutions. This may seem low, but many of the key ingredients are extremely powerful. For a stronger version, 1% dilutions can be replaced with 10%, and 10% dilutions with pure materials, while keeping the same proportions. Some ingredients, however, may not be commercially available pure, and increasing the concentration will also change the overall balance of the accord.
